“ Having worked in Peru in the early 90s, I became a great fan of peruvian cooking. In particular, pollo a la brasa is the hallmark of this spectacular cuisine. If you've never had this dish, it is well worth any chance you get to try the real thing - there's something about the aji chili peppers that can't be matched. I've searched for over 15 years throughout the U.S. while traveling - Miami, NYC, D.C., Boston, Chicago, Houston, Dallas, Phoenix, Denver, LA, San Diego, all over - to find someone, some place that serves genuine pollo a la brasa (Lima-style). At last, I've found it - Inka's peruvian Restaurant in SF is the place to go. In the context of my search, it's the only place I've been, or even heard of, that can prepare what may be the world's tastiest chicken. Do go, give it a try - I seriously doubt you'll be disappointed. Inka's is a well-run, friendly place, with very solid service. The menu as a whole is delicious. ”
